About Biltong

What is biltong?
Biltong is a traditional South African air-dried meat. Strips of beef are marinated in vinegar, salt and spices, then slowly air-dried over several days. The result is a tender, full-flavoured snack that is naturally preserved without cooking.

How is biltong different from beef jerky?
They're both dried meat, but they're made very differently. Jerky is usually cut thin, often marinated in sugary sauces, and cooked or smoked quickly at heat. Biltong is cut thicker, cured in vinegar and spices, and air-dried slowly without cooking. That gives biltong a softer texture, a richer beefy flavour and usually far less sugar.

Is biltong raw?
Biltong isn't cooked, but it isn't raw meat either. The vinegar cure and slow drying process preserve the meat, which is why biltong has been eaten safely for centuries.

What's the difference between wet and dry biltong?
It's all about how long it's been dried. Wet biltong is softer, moister and pink in the middle. Dry biltong is firmer and more intense.

Our Biltong

What makes your biltong homemade?
Every batch is made by hand in small quantities by myself in Suffolk. We marinate, hang and slice everything ourselves, with no mass production and no rebranded factory product.

What meat do you use?
We use British / grass-fed / locally sourced, chosen for lean, tender cuts such as silverside or topside.

What ingredients are in it?
Just beef, vinegar, salt, coriander, black pepper and other spices. No MSG, no artificial preservatives, no added sugar.

Is your biltong halal?
No, our biltong isn't halal certified.

Is biltong healthy?
Biltong is naturally high in protein and low in carbohydrates and sugar, which makes it popular with gym-goers, walkers and anyone looking for a snack that fills them up. As with any cured meat, it does contain salt, so enjoy it as part of a balanced diet.

Storage & Shelf Life

How should I store my biltong?
Biltong needs to breathe. Once opened, keep it in a paper bag in a cool, dry spot away from sunlight. Avoid sealed plastic bags or airtight tubs, which trap moisture and can cause mould, especially in the UK's damp climate.

How long does it last?
Unopened vacuum-packed biltong keeps for up to 3/4 months. Once opened, it's best eaten within [3–5] days. Wetter biltong has a shorter life than dry.

Can I keep it in the fridge?
You can, but it isn't necessary and can make biltong sweat. If you do, wrap it in paper first, not plastic.

Can I freeze biltong?
Yes, sealed biltong freezes well for several months. Freeze it in small portions and defrost in the fridge. The texture may soften slightly.

My biltong has white spots. Is it mould?
A fine white powder is often just salt or fat coming to the surface, which is normal. Fuzzy green, blue or furry white growth is mould, so don't eat it. If you're unsure, send us a photo and we'll help.

We currently deliver to UK mainland addresses.

How much is delivery?
Standard delivery is £4.99. Orders over £50 get free delivery.

When will my order arrive?
Because we make in small batches, orders are usually dispatched within 1–2 working days and sent via Evri Next Day.

Can I order in bulk or for an event?
Absolutely. For large orders, gifts, corporate hampers or events, contact us and we'll put something together.

Do you do gift boxes or subscriptions?

What if my order arrives damaged?
Get in touch within 48 hours with a photo and your order number, and we'll replace it or refund you.
